To do some truffle butter from fresh truffles you will need:
- 100 g of Truffle (I use typically Tuber Unicatum or Tuber Aestrum) and 200 g Butter (or simply twice more butter than the truffle)
- 2 g Salt
- 1 Tablespoon Lemon juice
Using a hand mixer, beat the butter with the salt and lemon juice until getting a homogenous mixture.
Grate the truffles, and finely dice one part if necessary. Knead everything together with the hand mixer.
Form a couple of 50 g portions and package them in parchment paper or simply place them in a box.
Finally, eat them now or put them into the fridge.
