Something more about our truffles:
Appearance: Fresh truffles are irregularly shaped, usually ranging in size from a walnut to a golf ball. They have a rough, dark brown or black exterior with a warty texture. Inside, the truffle has a marbled, light brown to dark brown flesh with white veins.
Season: truffles are harvested from May to August, depending on the region and climate. They are typically found in countries such as France, Italy, Spain, and parts of Eastern Europe.
Aroma: The aroma of fresh truffles is complex and pungent, often compared to a mix of earthy, woody, and fruity scents. When ripe, they emit an enticing fragrance that can enhance various dishes.
Flavor: truffles have a mild and delicate flavor compared to other truffle varieties. They offer subtle notes of earthiness, mushroom, and garlic. Their flavor profile can vary depending on the maturity and quality of the truffle.
Culinary Uses: Fresh truffles are a prized ingredient in gourmet cuisine. Our fresh black truffles are usually shaved or grated thinly over dishes to maximize their flavor. They pair well with foods like pasta, risotto, eggs, potatoes, salads, and grilled vegetables. They can also be used to infuse oils, butter, or cream, creating truffle-infused products for cooking or finishing touches.
Storage: Fresh truffles are best enjoyed as soon as possible after harvest since they have a relatively short shelf life. They are highly perishable and should be stored properly. Wrap them individually in paper towels or store them in a breathable container in the refrigerator. Consume them within a week for the best flavor.
Availability and Pricing: Compared to winter truffles, truffles are more abundant and generally more affordable. However, their availability may still vary depending on the region and demand. Prices fluctuate based on factors such as size, quality, and market conditions.
When cooking with fresh truffles, it’s important to use them sparingly to appreciate their subtle flavor. The truffles should be cleaned and brushed gently to remove any dirt or debris before use. For an optimal experience, it’s recommended to serve them fresh and avoid subjecting them to excessive heat or cooking for prolonged periods, as it can diminish their aroma and flavor.
