Once you order fresh truffles and the order got delivered to you, comes the next question – How to store the fresh truffles at home?
Initial state – truffles has reached your home
Typically truffles will come in an thermo bag or a thermo box with a gel coolant. They might be covered with paper or a small towel. Avoid truffles in jars, in juice and so on that is mostly bullshit. Truffles should come with a bit of their dirt in the way described above.
Procedure for storing the fresh truffles for a longer period
- The first thing you have to do is gently brush them a bit if they have some patina or moss. If there are pieces that starts to rotten cut them gently.
- Than change the paper or the napkin with a new dry one.
- Put them in a well sealed box (if you don’t want your full fridge to get infused by their aroma) and return them to the fresh section of the fridge. Note – the truffles should not be tightly packed!!!!
- Change the towel or the napkin every day.
Finally and most importantly don’t try to store the fresh truffles for a long period of time. Enjoy them in the next couple of days – they loose some of their aroma day by day and thus in a week them may still look fresh but will have only half of their truffle scent. … And the truffle scent is all we care about.
What should we avoid doing with fresh truffles
- Don’t freeze them. This will kill their aroma. If you do so you may compensate with some truffle oil!
- Don’t dry them unless you want to teach your dog. For humans dry truffles have little value!
- Don’t leave the fresh truffles in a box too densely packed!
- Don’t leave them for a longer period outside of the fridge!
